Delicious homemade dumplings, with a filling of beef, chives and green onion, and served with a succulent Asian sauce. What a treat!

For the dumplings
In a bowl, combine beef (or pork), ginger, green onion, garlic, chives, soy sauce, egg white and salt.
Place dumpling dough on a clean work surface. Place 1 tsp. of filling in the center of the dough.
Using a pastry brush or your fingers, wet the edges of the dough. Fold the dumpling into a triangle, then fold each side toward the center, making a few creases.
Place dumplings on a plate, folds up. Cover with a clean kitchen towel so they don’t dry out.
Cooking: pour water into a wok or large saucepan.
Place dumplings in a perforated container or in a bamboo circle.
Cover and steam for 6-8 minutes, until filling is cooked and ravioli is translucent.
For the soy-chives sauce
While the dumplings are cooking, prepare the sauce by mixing all the ingredients in a bowl.
Remove the dumplings and arrange them on the plates with the soy sauce on the side.
