Let’s take advantage of the last tomatoes and basil in the garden to make this Caprese salad recipe, with baked cherry tomatoes.

Ingredients
- 2×10.5 oz of cherry tomatoes (500 g)
- 2 tablespoons of olive oil
- 2 teaspoons of liquid honey
- ½ teaspoon of coarse sea salt
- 1 1/2 cup of sliced mozzarella cheese (150 g)
- 2 tablespoons of balsamic vinegar
- a few basil leaves
Instructions
1. Preheat the oven at 350° F (180°).
2. Wash the tomatoes, then place them on a baking paper lined plate.
3. Mix the oil, honey and salt, then spread the mixture over the tomatoes.
4. Bake for about 25 minutes at 350° F (180 °C).
5. Let the tomatoes cool and place them on a plate.
6. Spread the mozzarella slices over the tomatoes, drizzle with balsamic vinegar, season with pepper and garnish with basil.
