A delicious dessert prepared in a short time, straight from the famous French chef Christophe Michalak. This Crème Brûlée has exotic accents that make it unique!

Yield: 4 persons, with 4 medium-sized ramequins
Ingredients
- 2 cups of milk (5 dl)
- 1 stick of cinnamon
- zests of 1 lime and 1 lemon
- 2/3 cup of brown sugar (120 g)
- 4 egg yolks
- 2 tablespoons of corstarch
Instructions
1. Heat the milk with the lime and lemon zests and the cinnamon stick.
2. In a bowl, whisk together the sugar, cornstarch, and 4 egg yolks.
3. Pour the infused milk over the sugar/flour mixture.
4. Return to the fire, stir constantly. Bring to the boil.
5. Pour the preparation into a high container. Mix everything together.
6. Pour the mixture into the ramequins and set aside in a cool place for about 2 hours or overnight.
7. Before serving, sprinkle the Catalan cream with brown sugar. Caramelise the sugar with a blowtorch.
