Here is a recipe for English pancakes, also known as crumpets.
These are small pancakes particularly appreciated in Anglo-Saxon countries, made with leavened dough. During baking, the crumpets form pretty little holes on the surface.
Crispy on the outside and soft inside, they are served hot with butter or jam, but they can also be served with a salty topping, the choice is yours!

Rest Time: 45 minutes
Cook Time: 3 minutes on each side

Yield : 7-8 crumpets
Ingredients
- 3/4 cup + 3 tablespoons of all-purpose flour (125 g)
- 1 pinch of salt
- 1 teaspoon of baking powder
- 1/3 cup + 2 tablespoons of milk (1dl)
- 3 tablespoons of lukewarm water (0.5 dl)
- 2 tablespoons of sugar (if you want a sweet version)
Instructions
Mix all the ingredients in a bowl until a homogeneous paste is obtained. Cover and let stand for 45 minutes.
Oil a frying pan and cooking rings (egg rings).
Pour 2 spoonfuls of dough in each circle. Let cook 3 minutes.
Remove the circles and turn the crumpets over to cook for another 3 minutes.
Serve hot, warm or cold.
Serve with sweet or savoury, as you wish: jam, chocolate, powdered sugar, smoked salmon, capers, ham, etc.
