Here is a fantastic recipe of a rhubarb cake ultra airy and mellow, with delicious pieces of rhubarb neither too sweet nor too acidic. A real treat !
Prep Time: 15 minutes
Baking Time: 35-40 minutes at 350° F (180° C)
Difficulty: easy
For: a round mold of 11 inches (28 cm) in diameter
1. Preheat the oven to 350° F (180° C).
2. In a large bowl, mix the flour, the baking powder, the baking soda, the sugar and the cornstarch.
3. Add the eggs and mix.
4. Melt the butter, add it, and mix.
5. Add the plain yogurt and mix.
6. Wash the rhubarb stalks and peel them if you wish. Cut into small pieces.
7. Gently stir the rhubarb pieces to the dough with a spatula.
8. Pour the mixture into a cake pan.
9. Bake for about 35-40 minutes.
10. Let cool before unmolding.
