An original rice recipe, in the shape of balls, which can be cooked in a frying pan or in an Airfryer. They are served with a cucumber and plain yogurt sauce for a light and fresh result!

Ingredients
For the riceballs
- 1 1/4 cup of rice (250 g)
- 1 tablespoon of olive oil
- 1 shallot, minced
- 1 clove garlic, crushed
- salt-pepper
- 1/2 cup of plain yogurt (125 g)
- 6 tablespoons of panko or breadcrumbs (30 g)
- 2 tablespoons of parmesan, grated (20 g)
For the cucumber sauce
- 1 cucumber
- 6 tablespoons of plain yogurt
- salt-pepper
Instructions
Cover and cook the rice in salted water for about 10 minutes, drain and set aside.
Meanwhile, heat the oil in a non-stick frying pan, fry the shallot and garlic for about 5 minutes, season.
Mix with plain yogurt and rice. Knead until a compact mass is obtained.
Divide the mass into 24 portions and form balls.
Pour the breadcrumbs or panko into a shallow dish, pass the meatballs through it and press firmly.
Cook the meatballs in Air-Fryer for 9 minutes at 400° F (200° C). If you don’t have an Air-Fryer, no problem, heat a frying pan with 3 tablespoons of olive oil and cook the meatballs on all sides for about ten minutes.
Meanwhile, prepare the cucumber sauce: mix the cucumber and yogurt. Season with salt and pepper. Serve with the meatballs.
