Yield: approximately 30 madeleines
1. Preheat oven to 375° F (190° C).
2. Melt 2 tablespoons of butter and brush a little in each mold. Set pan aside.
3. In a small bowl, whisk together flour, salt, pepper, and baking powder.
4. Place butter in a microwavable glass bowl. Microwave on low power for 1 to 2 minutes, until melted.
5. Let mixture cool for about 3 to 4 minutes and then add eggs, one at a time, whisking well after each addition until completely blended.
6. Whisk in flour mixture until incorporated.
7. Stir in rosemary and cheese with a rubber spatula until just blended into batter.
8. Using a tablespoon or a teaspoon, fill shell molds with batter until almost full.
9. Bake for 10 to 12 minutes, until madeleines puff up, the tops crack lightly, and the edges are golden brown.
10. Remove pans from oven. Use a small offset spatula to remove each individually.
