Flammkuchen is a speciality of Baden-Württemberg and Rheinland-Pfalz regions on the Germany. It is composed of bread dough rolled out very thinly in the shape of a rectangle or oval, which is covered with “crème fraîche”.
Here 2 different recipes are proposed: one with ham and onions, and the other with tuna and shallots. Enjoy!

For the dough (makes 1 Flamenkuche)
For the sour cream
For the dough: In the robot bowl, mix all the ingredients, making sure that the salt and yeast are not in direct contact.
Shape into a ball and let stand covered under a damp cloth for 1h30. Then, fold the dough over itself twice.
For the sour cream: In a bowl, combine the yogurt and cream. Add the oil and egg yolk. Add flour, salt and pepper. Stir until the cream becomes homogeneous and smooth.
Roll out the dough very thinly into a rectangle-ish using a rolling pin. Prick it with a fork. Spread the cream on top.
Then arrange what you want (here, tuna-shallot or ham-onion).
Bake for 15-20 minutes at 400° F (220° C).
