A lemon cake recipe that is out of the ordinary, thanks to a touch of honey and a hint of thyme. Ideal to taste it with a good cup of tea!

Baking Time: 40 minutes at 350°C (180°C)

For: a mold of 11 inches (28 cm) long
For the icing
Preheat the oven at 350°F (180°C).
In the food processor, blanch the eggs and sugar, add the honey and continue beating for a few minutes.
Add the flour sifted with the baking powder, then the melted butter. Zest the lemon, then squeeze it to collect the juice. Remove the leaves from the thyme.
Add the zests and juice to the paste, as well as the thyme, mix well to distribute all the ingredients evenly.
Butter a 11 inches (28 cm) cake tin. Pour in the batter and bake at 350°F (180°C) for 30 to 40 minutes.
Unmold the cake and let it cool completely.
For the icing, combine all the ingredients, then pour over the cake and leave to harden for about 30 minutes.
The trick: replace lemon with grapefruit or orange.
