Summer is fast approaching! Nothing more appropriate than a delicious mango flesh cake soaked in lime juice.

Baking Time: 55 minutes at 350°F (180°C)

For: a rectangular mold of 11 inches (28 cm) long
Ingredients
- 1/2 cup of butter, softened (100 g)
- 3/4 cup + 2 tablespoons of sugar (200 g)
- zest and juice of 1 lime
- 2 eggs
- 3/4 cup + 2 tablespoons of all-purpose flour (125 g)
- 1 teaspoon of baking powder
- 1 big mango
- 1/2 cup of icing sugar (75 g)
Instructions
- Preheat the oven at 350°F (180°C).
- Butter the bottom and edges of a cake tin.
- Using a knife, chop the mango flesh.
- In a food processor, combine the butter, sugar and lime zest, then add the eggs one by one, mixing well.
- Stir in the sifted flour and baking powder. Blend in the flour and baking powder.
- Add the mango puree.
- Pour into the pan.
- Cook for about 55 minutes. Check the baking time by pricking a knife in the center of the cake.
- In the meantime, mix the icing sugar and lime juice in a bowl and pour the mixture over the still warm cake, the surface of which has been pricked with the tip of a knife.
- Allow to cool to room temperature then unmold the cake.
