Nothing beats a good homemade soup to start the year off right! This soup is made with a winter vegetable (parsnip), and delicious chestnuts.

Ingredients
For the soup
- 4 parsnips
- 2 cups of vegetable or chicken broth (5 dl)
- 1 1/4 cup of milk (3 dl)
- 1/4 teaspoon of nutmeg
- salt and pepper
For the garnish
- 3 oz of pan-fried chestnuts (100 g)
- 1 small shallot
Instructions
Peel the parsnips and cut them into coarse pieces of about the same size to ensure even cooking.
In a saucepan, melt a knob of butter and brown the parsnips for 2 to 3 minutes. Add milk and broth and bring to a boil over low heat. Cover and cook for 20 minutes.
When the parsnips are cooked, season with nutmeg, salt and pepper and blend with the cooking liquid to obtain a velvety consistency.
While the soup is cooking, prepare the garnish: finely chop the shallot, cut the chestnuts into small cubes.
Melt a knob of butter in a small pan and sweat the shallot. Add the chestnuts and continue cooking for 5 minutes.
Serve the soup in bowls and sprinkle some garnish on top.
