Ingredients
- 1 box of pasta (for instance, Farfalle)
- 4 eggs
- 4 big handfuls of aragula
- 3 tablespoons of olive oil
- mix of herbs (chives, tarragon, basil, etc.)
Instructions
1. Cook the pasta in salted water, then drain and let cool.
2. Cut and wash the herbs (if they are fresh). Mix with the beaten eggs. Add salt, pepper.
3. Bake the omelet for a few minutes in a frying pan with 1 tbsp. of olive oil. Let cool.
4. Cut the omelet into pieces. Put them in a salad bowl.
5. Wash the arugula, put it in the bowl.
6. Add the pasta. Add 2 tbsp. of olive oil. Mix.
