How about a pie without butter?
It makes a light, but still tasty pie that will almost eat itself!
Prep Time: 10 minutes
Baking Time: 40-45 minutes at 350°F (180°C)
Difficulty: easy
For: a mold of 11 inches (24 cm) of diameter
1. Preheat the oven to 350°F (180°C).
2. In a large bowl, mix the sugar and the yolks until you get a white texture (set aside the whites).
3. Add the lemon juice and mix.
4. Add the yogurt and mix.
5. Cut the peaches in small cubes and add them to the mixture, delicately.
6. Beat the egg whites with the salt until stiff.
7. In a medium bowl, mix the flour with the baking powder.
8. Add the flour-baking powder mixture and the egg whites to the batter, alternatively, delicately, and with a spatula.
9. Spread the batter into the mold.
10. Cook for 40-45 minutes. Check with a knife if the pie is well baked.
11. Once out of the oven, brush the pie with apple or quince jelly or apricot jam.
