This recipe comes from the French Master himself, Pierre Hermé. It’s a simple recipe which will give you a fabulous cake!

Baking Time: approx. 45 minutes to 340° F
Difficulty: easy
For: a rectangular mold of 11 inches
1. Pour the milk into a small pan. Cut the vanilla beans in length. Grate the seeds and put them into the milk, along with the vanilla beans.
2. Boil the milk, then retrieve it from the heat and let infuse for 30 minutes.
3. Preheat the oven to 340° F.
4. In a large bowl, whisk the butter and the eggs.
5. Add the powdered sugar and the ground almonds and mix for 5 minutes.
6. Add 1 egg and 3 yolks (set aside the whites). Mix.
7. Crush the vanilla beans et filter the infused milk. Add it to the batter and mix.
8. Whip egg-whites to a light mousse with the sugar.
9. Add the mousse delicately to the batter.
10. Add the flour and mix with a spatula, delicately, without breaking the egg-whites.
11. Pour the batter into the mold.
12. Bake for about 45 minutes.
13. Retrieve the cake from the mold 5 minutes after it’s baked..
