An ideal chutney to accompany cheese and crackers. It’s made from a sweet blend of grated apples, maple syrup and shallots deglazed with apple brandy.

Ingredients
- 4 shallots, thinly sliced
- 2 tbsp. olive oil
- 3 tbsp. cider vinegar
- 2 tbsp. brandy or apple brandy
- 1 cup peeled and grated apples (approx. 2 medium apples – 180 g)
- 1/3 cup maple syrup (75 ml)
- 1/3 cup water (75 ml)
Instructions
In a skillet over medium heat, cook shallots in oil until lightly browned. Deglaze with vinegar and brandy. Reduce liquid by half. Remove from heat.
Add remaining ingredients. Season generously with salt and pepper and stir.
Simmer over low heat, stirring frequently, until the liquid has almost completely evaporated and the shallots have melted, about 15 minutes.
Transfer to an airtight glass container and leave to cool. Cover and refrigerate for 3 hours before serving.
Chutney will keep for 1 month in the refrigerator.
Serve chutney with crackers or as an accompaniment to a cheese platter.
