Enjoy the strawberry season to make this tasty pie that makes you want to taste it just by looking at it! Delicious shortbread, light vanilla cream, delicious strawberries and an attractive strawberry glaze!

Baking Time: 15 minutes at 350° F (180° C).

For: a round mold of approximately 10-11 inches Ø (26-28 cm Ø)

1. Preheat the oven to 350° F (180° C).
2. Prepare the dough: in a bowl, dilute the egg with the sugar and a pinch of salt.
3. Stir in the flour, the lemon zest and the melted butter. Mix until smooth.
4. Spread in the plate. Prick the pie with a fork.
5. Bake for about 12-15 minutes.
6. Prepare the vanilla cream: mix all the ingredients in a saucepan and whip well (it is important to whip well, otherwise the corn starch could make lumps).
7. Bring to a boil, stirring constantly.
8. As soon as the cream thickens, move away from the pan and continue to stir for about 2 minutes.
9. Cool and chill for at least 1 hour.
10. Before serving the pie, spread the cream over the cooled pie pan, evenly.
11. Cover with cut strawberries.
12. Brush with heated strawberry jelly.
