Here’s a recipe for a salad with an Asian flavour, served with cooked chicken. The dressing is made with Asian ingredients, but also with peanut butter. Exotic and delicious!

Ingredients
For the peanut dressing
- 3 tablespoons of water
- 2 tablespoons of rice wine vinegar
- 1 tablespoon of green onions, chopped
- 1 tablespoon of peanut butter
- 1 tablespoon of soy sauce
- 1 teaspoon of ginger, peeler and grated
- 1 teaspoon of dark sesame oil
- 2 teaspoons of roasted peanuts
For the salad
- 3 ounces of extra-firm tofu (85 g)
- 2 cups of mixed salad (150 g)
- 2 tomatoes, chopped
- 1 cup of cooked chicken breast, shredded (140 g)
- rice noodles
Instructions
Prepare the dressing by first setting aside peanuts and then putting the rest of the ingredients in a blender. Blend until smooth. Add peanuts and blend for about 10 seconds, just to cruch peanuts. Or, you can also crush the peanuts beforehand in a mortar. Set aside.
Cut the tofu in thin slices and then fry it until it is golden brown on all sides (air-fryer, 10 minutes at 400°F).
Cook the rice noodles according to package directions. When cooked, rinced them under cold water.
For the salad, mix all the ingredients together in a salad bowl.
Add the dressing and toss to coat evenly.
Sprinkle with fried tofu and crushed peanuts.
