If you have nice tomatoes and you like mustard, this recipe is made for you! A good dough and a delicious filling made of cheese, Provence herbs and mustard make this pie a perfect light meal!

Ingredients
For the dough
- 1 cup g of all-purpose flour (150 g)
- 2 tablespoons of soft butter (35 g)
- 3 tablespoons of milk (0.5 dl)
- 1 teaspoon of salt
- 1 teaspoon of basil
For the filling
- 3 tomatoes
- 6 tablespoons of mustard (75 g)
- 2 tablespoons of crème fraîche (25 g)
- 1/2 cup of grated cheese (mozzarella, Gruyere, etc.; 50 g)
- 1 teaspoon of Provence herbs
- salt, pepper
- olive oil
Instructions
1. Put all the ingredients of the dough in the tank of the robot. Mix until you get a homogeneous dough.
2. Spread on the work surface slightly floured. Put in the mold lined with a baking paper. Prick with a fork.
3. In a bowl, mix mustard, crème fraîche and Provence herbs.
4. Spread on the dough.
5. Sprinkle with grated cheese.
6. Wash and cut the tomatoes in slices. Arrange them on the pie.
7. Add salt and pepper and olive oil.
8. Bake for about 30-35 minutes at 355° F (180° C).
