Pide bread is a traditional Turkish bread.
It is a bread with an airy crumb and a crispy crust, similar to a brioche. It is decorated with sesame seeds, poppy seeds or nigella seeds, depending on your taste.

Place all ingredients in the bowl of a food processor, making sure that the yeast and salt are not in direct contact. Blend for 10-15 minutes until you have a smooth dough.
Cover and let double in volume for 1 hour.
Deflate the dough by pressing it with your fist, then flatten the dough ball with your hands into a circle about 1 inch (3 cm) thick and place it on a baking sheet lined with baking paper.
Cover and let the bread rise for 40 minutes.
Preheat oven to 350°F (180°C).
Then decorate the bread by making holes in the dough with your fingers. Start by forming a circle, then several squares, as shown below.
Mix the egg yolk with the milk and brush it on the bread.
Sprinkle with sesame seeds, alternating colors on each square.
Bake for about 30 minutes.
Let the bread cool on a rack before eating.
