Frittata is a traditional Italian dish whose main ingredient is the egg. It resembles the French omelette and is garnished with various ingredients such as meat, vegetables and/or cheese.
This version features zucchini, and sun-dried tomatoes. A recipe ready in 30 minutes for a healthy, balanced meal!

Ingredients
- 12 eggs
- 1 zucchini, grated
- ½ cup oil-dried tomatoes, drained and coarsely chopped (100 g)
- ¼ cup Parmesan cheese shavings (30 g)
- 2 teaspoons olive oil
- 1 lemon, zest finely grated
Instructions
Preheat oven to 400°F (200°C). Generously butter a cast-iron skillet about 10 in. (25 cm) in diameter.
In a large bowl, whisk together eggs, zucchini and sun-dried tomatoes. Season generously with salt and pepper.
Pour the mixture into the pan.
Bake for 25 minutes or until eggs are cooked and lightly browned. Let cool for 5 minutes.
Cut the frittata into slices. Serve warm or cold with a salad.
