An ideal recipe for using up your overripe bananas! This simple and delicious treat requires only 4 ingredients. Perfect for an afternoon snack or an impromptu dessert, this recipe perfectly balances sweetness and crunch.

Prepare the Dough: Peel the bananas and mash them finely with a fork. Mix the mashed bananas with the sesame seeds until well combined.
Shape the Bites: Scoop about one tablespoon of the mixture onto a baking sheet lined with parchment paper.
Form the Wells: Using the back of the spoon, shape the mixture into a round cookie and create a small well (indentation) in the center. This will hold the ganache after baking.
Bake: Repeat the process for the rest of the dough. Bake at 350°F (180°C) for approximately 20–25 minutes until golden and firm.
Make the Ganache: Heat the heavy cream in a small saucepan until it just begins to boil. Pour it over the finely chopped dark chocolate. Add the cinnamon.
Emulsify: Stir vigorously until you have a smooth, glossy ganache.
Fill: Pour the warm ganache into the center well of each baked cookie.
Chill: Let the bites cool and set in the refrigerator for at least 1 hour before serving.
