How about making delicious potato and shrimp croquettes and serving them with homemade hummus? It may seem long and tedious at first, but it won’t take you that long!

Start by peeling, washing and dicing the potatoes, then cook them in a pot of salted water to make a puree. After about 20 minutes, drain the water and mashed potato.
Add egg yolk, olive oil and seasoning.
Make balls. Using your thumb, make a small indentation in the middle of each ball, insert a small shrimp and close the ball by pinching the dough and rolling it.
Break the egg into a soup plate and whisk it with a fork. In another soup plate, pour the flour. In a third plate, pour the panko.
Roll each croquette in flour, then in egg and finally in panko. Place on a plate.
Preheat the air-fryer to 400°F (200°C). Spray a little olive oil on the croquettes. Cook for about 10-12 minutes.
Meanwhile, prepare the hummus. Drain the chickpeas, then put them in the blender with all the other ingredients. If you find that the chickpea puree is a bit thick, you can add a little water to make it smooth.
Serve together immediately.
