In less than 30 minutes, you’ll be able to make this recipe for beef stir-fry topped with a delicious tomato and olive sauce.

Ingredients
- 1 beef sirloin steak, (1 lb – 450 g)
- 2 onions, thinly sliced
- 4 garlic cloves, chopped
- 3 tbsp. olive oil
- 1 can (398 ml/14 oz.) diced Italian tomatoes
- 1 bell bell pepper, diced
- 1/3 cup olives, pitted and coarsely chopped (50 g)
- 2 tbsp chopped flat-leaf parsley
Instructions
On a work surface, soften the meat with a mallet. Cut into thin strips and place in a bowl. Add onions, garlic and oil. Season with salt and pepper and mix well.
In a large nonstick skillet over high heat, cook half the meat mixture, stirring occasionally, for 5 minutes or until browned. Set aside on a plate and continue with the remaining beef.
In the same skillet over medium heat, cook the tomatoes, bell pepper and olives for 5 minutes.
Add meat to sauce. Reheat, stirring to coat meat with sauce, about 1 minute or until onion is softened. Adjust seasoning.
Garnish with parsley.
Serve with couscous or rice, if desired.
