A shortcrust dough, cherries, amaretti, a little mascarpone and that’s it! You get a delicious and original fruit tart with that little extra something thanks to the amaretti!

For the shortcrust dough
For the filling
Preheat oven to 430°F (220°C).
Prepare the shortcrust dough: mix all the ingredients, except the crumbled amaretti, in the bowl of a food processor until you obtain a homogeneous dough. Roll out the shortcrust pastry and place in a lined pan.
Prick the dough at short intervals and sprinkle with a third of the amaretti.
Prepare the filling: in a bowl, mix the mascarpone with the lemon juice, eggs and sugar. Spread the mixture on the bottom of the pie. Then, spread the pited cherries.
Sprinkle the rest of the amaretti.
Bake for about 35 minutes at 430°F (220 °C). Take the pie out and let it cool before serving.
