Here is a delicious recipe for Christmas cookies, made with white chocolate, almonds and cinnamon and beautifully decorated with sugar beads.

In a bowl, beat the egg whites and salt with a whisk. Stir in the sugar. Add delicately the lemon juice, almonds, chocolate and cinnamon, work it all into a dough.
Spread a little sugar on the work surface and roll out the dough in portions about 0.40 inch (1 cm) thick, then detach it with a spatula.
Cut out stars with a cookie cutter and dip the cutter regularly into a sugar-filled bowl.
Place the stars on a baking paper lined plate. Allow to dry for about 6 hours or overnight at room temperature.
Preheat the oven to 430°F (220°C). Cook for about 5 minutes. Remove the cinnamon stars from the oven and let them cool on a rack.
For the decoration: Melt the chocolate. Dip the cinnamon stars in the chocolate, drain them, decorate them with sugar beads and let them dry on a sheet of baking paper.
