It’s Easter this weekend, so treat yourself with these funny twists that look like rabbits, and are composed of pistachios, almonds and apricot jam! A true delight!
Prep Time: 30 minutes
Rest Time: 2.5 hours
Baking Time: 20 minutes at 320° F (160° C)

1. In the robot’s bowl, mix the flour, yeast, salt and sugar, avoiding the salt and the yeast touching each other. Pour in milk and knead until soft, smooth dough.
2. Add the butter in pieces and mix.
3. Cover and let stand for 2 hours at room temperature.
4. Meanwhile, chop pistachios very finely. Mix with almonds, sugar, jam and milk.
5. Divide the dough into 8 portions. Drop each portion into rectangles on a floured work surface.
6. Spread the filling.
7. Roll up the dough from the long side.
8. Cut in length.
9. Twist the strands in pairs so that the cut is on top.
10. Make rabbit ears.
11. Place on two plates lined with baking paper. Cover and let rise 30 minutes.
12. Preheat the oven to 320° F (160° C).
13. Bake for about 20 minutes.
14. In the meantime, prepare the glaze. Brush the twists as soon as they come out of the oven.
The Tip: Sugar or marzipan balls can be glued to represent the eyes and nose of rabbits.
