For your information, it’s a rather rich dessert, and can quickly be disgusting, so a small slice at a time!

Baking Time: 12 minutes at 350° F (180° C)

For: a rectangular mold of 7.8 inches (20 cm) long
For the biscuit
For the filling
1. Prepare the biscuit. Beat the egg whites until stiff, gradually adding the icing sugar.
2. Stir in the yolks and mix for a few seconds with a mixer or spatula.
3. Stir in the flour and cornstarch and mix gently with a spatula.
4. Spread on a lined baking sheet and bake for 12 minutes at 350° F (180° C).
5. Let cool, then soak in coffee with a brush, if wanted.
6. Cut the biscuit according to the width of your mold (here in 4 equal parts).
7. In a bowl, combine the almonds, sugar and butter until a foamy mass is obtained.
8. Add a small glass of cherry brandy if you wish.
9. Mix with the whipped cream.
10. Spread in the cake pan, intersperse with the layers of biscuit, finishing with a layer of cream.
11. Place in the refrigerator and allow to set for 24 hours.
The trick: make your life easier by taking ready-made ladyfingers!
