The day before, prepare the gingerbread. Preheat oven to 180°C.
Zest the oranges, then mix the zest with the sugar.
Pour the flavored sugar, milk, cinnamon, nutmeg, cardamom and ginger into a saucepan and heat for 10 minutes.
Place the honey, flour, baking powder, eggs and warm milk in a food processor. Blend until smooth.
Spread the mixture on a tray lined with baking paper and bake for 30 minutes. Leave to stand overnight.
The next day, prepare the mascarpone cream: in a high-sided bowl, whisk together all the ingredients, watching the cream set.
Next, prepare the soaking liquid: mix coffee, sugar and liqueur to taste.
Place half the gingerbread in the dish and moisten with half the liquid.
Cover with half the mascarpone cream.
Repeat with the remaining ingredients, then place in the fridge overnight.
Just before serving, sprinkle the tiramisu with chocolate powder, cocoa, cinnamon, allspice or whatever you like. You can also add festive decorations, such as stars (photo below).
