This week, I’m bringing you a brilliant side dish that’s sure to set off an explosion of flavors in your mouth! Japanese-style miso eggplant is a traditional Japanese dish that requires just 30 minutes of your time. The result: ultra-melting eggplants caramelized with miso!

Ingredients
- 2 eggplants
- 2 tbsp. white miso
- 3 tbsp. Japanese sweet sushi vinegar
- 2 tbsp. soy sauce
- 1 tbsp. toasted sesame oil
- Sesame seeds, chives
Instructions
Preheat oven to 390°F (200°C).
Rinse and quarter the eggplants, then cut each quarter in half. Using a knife, make crosswise incisions and place in a gratin dish.
Mix miso, sweet vinegar, soy sauce and sesame oil in a bowl.
Brush the eggplant pieces with the marinade.
Cook in the oven for 30 minutes.
Sprinkle with snipped chives and sesame seeds.
Serve with all kinds of meats, salads, a bowl of rice or whatever you like.
