Garlic & lemon shrimps are juicy, tasty and go well with everything! In this recipe the shrimps are mixed with spices and then grilled.
They are served with orzo, zucchinis, olives and almonds. A simple, tasty and healthy meal!

Ingredients
For the shrimps
- 1 pound medium shrimps, peeled and deveined
- 3 tablespoons of butter
- 1 tablespoon of olive oil
- 1/2 teaspoon of paprika
- 1/2 teaspoon of salt
- 1 tablespoon of lemon juice
- 4-6 garlic cloves, minced
For the orzo
- 2 tablespoons of olive oil
- 1 tablespoon of butter
- 1 1/2 cups of uncooked orzo pasta
- 2 shallots, chopped
- 3 1/2 cups of low sodium chicken broth
- 1/4 cup of lemon juice
- 1/4 tsp of salt
- 1 tablespoon of parsley
- 1 tablespoon of oregano
- 2 zucchini, halved lengthwise and sliced 1/4-inch thick
- 1 pint of cherry tomatoes, halved
- 1/2 cup of olives, pitted and halved
- 1/4 cup of sliced almonds
Instructions
For the shrimps
- Dry the shrimps and place them in a bowl with the spices.
- Melt the butter in olive oil in a large skillet over medium-low heat. Increase heat to medium-high.
- Turn shrimps over and make room in the centre of the pan. Add the lemon juice and garlic to the centre of the pan and cook for 60 seconds, then stir all the ingredients. Place shrimps and juice on a plate.
For the orzo
- In the same frying pan, melt the butter with the olive oil over medium-low heat. Once melted, increase the heat to medium-high and add the orzo and shallots. Sauté for 3 to 5 minutes, until the orzo is toasted and the shallots begin to soften.
- Stir in chicken stock, lemon juice and salt, then add parsley and oregano. Simmer and cook for 6 minutes, then stir in the zucchinis and tomatoes. Simmer until the orzo is al dente, stirring often, for another 2 to 4 minutes.
- Add olives and shrimps and any accumulated juices. Taste and season with extra lemon juice or salt to taste. Serve on plates and add almonds on top. Serve immediately.
