For the biscuit
For the filling
1. Preheat the oven to 355° F (180° C).2. Start by preparing the biscuit: turn the egg whites into firm snow with the salt. Add the sugar little by little, whisk until the snow is shining. Add the egg yolks and whisk slowly.
3. In a bowl, mix the flour, cocoa powder and baking powder, sift. Gently stir to mass with a rubber spatula.
4. Spread on a baking sheet with baking paper.
5. Cook approx. 10 min at 355° F (180° C). Remove, cool on a wire rack.6. Mix espresso and sugar. Set aside.
7. In a bowl, mix together the mascarpone, the sugar and the whipped cream.
8. Cut half of the biscuit and place in the dish.
9. Spread half of the coffee to soak the biscuit.
10. Spread half of the cherries.
11. Spread half of the cream-mascarpone.
12. Renew the operation.
13. Refrigerate overnight, ideally 24 hours.
14. Before serving, sprinkle with grated chocolate.
