If you’re familiar with General Tao Asian sauce, you’ll love this tofu-based dish, which marinates in a blend of ginger, garlic, orange marmalade and soy sauce. Here, the tofu is cut into triangles, making for an attractive presentation on the plate.

Ingredients
For the sauce
- 1/2 cup chicken broth (125 ml)
- 1/4 cup orange juice (60 ml)
- 3 tbsp. orange marmalade
- 3 tbsp. soy sauce
- 2 tbsp. chopped fresh ginger
- 1 tsp. cornstarch
- 2 garlic cloves, chopped
For the tofu
- 1 tablespoon sesame oil
- 2 3/4 lb blocks firm tofu, de-fleshed and cut into 1/2 in. (1 cm) thick triangles (340 g)
- 1 spring onion, thinly sliced
- 2 tsp sesame seeds
Instructions
Start by preparing the tofu: in a large non-stick frying pan over medium heat, cook the tofu in the sesame oil for 5 minutes on each side, or until caramelized.
Add the spring onion and cook for a few more minutes.
Meanwhile, prepare the sauce: in a bowl, whisk together all the ingredients. Set aside.
Pour in the sauce and bring to the boil.
Simmer for 2 minutes or until sauce thickens.
Serve tofu with couscous or jasmine rice.
Sprinkle with sesame seeds.
