A recipe that comes straight from Japan and is part of the yakitori family, i.e. skewers where each piece is the size of a bite, and which are traditionally made with chicken.

Ingredients
For the chicken bites
- 1 lb of chicken (450 g)
- 1 egg
- 2/3 cup of panko (70 g)
- 1 inch of fresh ginger, grated (2 cm)
- 1 green onion (keep a bit of greenery for decoration), cut very finely
- 1 tablespoon of black sesame seeds
- 2 garlic cloves

For the yakitori sauce
- 1/3 cup of sake or rice vinegar (0.8 dl)
- 1/3 cup + 2 tablespoons of soy sauce (1 dl)
- 2 tablespoons of mirin
- 1 tablespoons of sugar
- 2 teaspoons of cornstarch
Instructions
Finely chop the chicken and mix it with the rest of the ingredients to obtain a homogeneous paste.
Form balls the size of a golf ball.
Combine all sauce ingredients in a small saucepan. Bring the mixture to a simmer to dilute the sugar. Continue to cook until the sauce thickens.
Cook the balls in a large frying pan with a little fat for about 15-20 minutes so that they are nicely browned (for air-fryer cooking is 10 minutes at 400°F-200°C).
Arrange balls on skewers.
Brush the balls with the yakitori sauce, sprinkle with the green part of the green onion and white sesame seeds.
Serve with rice for example.
